Temp:200° c - 390° f

Ingredients:

200 g digestive biscuits
100 g melted butter
2 x 397 g tins of condensed milk
juice of 6 large limes
zest of 4 limes
6 egg yolks
300 ml whipped cream to serve

Step 1: Make The Base

Start by making the base. Crush the digestives until they become fine crumbs, then add the meted butter and mix together. Firmly press the biscuit mixture into the bottom of a 9 inch spring form tin and set aside.

Step 2: Make The Filling

To make the filling, simply add the condensed milk, lime juice and zest and egg yolks into a bowl and beat together. Pour mixture on top of thebase and then pop in the oven for 8-10 minutes. It doesn't take long to set in the oven.

Step 3: Cool And Set

Take it out of the oven and let it cool. Once cooled, put in the fridge for 4 hours or until cold. Serve covered with whipped cream or with ice cream on the side.
