I’ve heard that using evaporated milk for mashed potatoes is not uncommon down south, but for much of the country this isn’t something most people have tasted, which is a shame, since it works so well, and was one of the inspirations behind these incredible “Tres Leches” Mashed Potatoes. That, and the catchy cake name, of course. Enjoy!
