My Baked Apricot Muesli Bars????
~ dairy free & gluten free (when using GF oats or quinoa flakes)
INGREDIENTS:
1/3 cup coconut sugar
1/4 cup rice malt syrup (honey and maple also work)
1/4 cup coconut oil
1 1/2 cups rolled oats
1/4 cup dried apricots (finely diced)
1/3 cup cup desiccated coconut
1/4 cup roasted almonds (roughly chopped)
2 heaped Tbsp almond meal
Crack of salt
METHOD:
1. Preheat oven to 175ºC and line a square tin (roughly 20x20cm) with baking paper
2. Heat coconut sugar, rice malt syrup and coconut oil in a small saucepan over low heat, stirring continuously until melted and smooth (this should only take 2 minutes max)
3. Take off the heat and fold in remaining ingredients, making sure to mix together wll so all oats are covered in the sticky coconut sugar glaze
4. Transfer mixture into your prepared baking tin, spreading out into an even layer and compressing down as hard as you can with the back of a rubber spatula. The more compressed you get this pre-cooked mixture, the better it will stick together
5. Bake in the oven for 12 minutes or until golden brown
6. Remove from the oven and allow to completely cool before gently flipping out of the tin and slicing into 10 bars
*IMPORTANT: Make sure you allow the mixture to completely cool before removing from the tin and slicing. As it cools it will harden and stick together*
