This mocha chip icebox cake is an absolutely luscious dessert, and requires no baking to create. You do need the patience to leave this in the “icebox” for a day, during which time the crisp chocolate chip cookies become very cake-like, as they absorb the creamy mocha mousse. This is one of the easiest and most delicious chilled desserts ever. Enjoy!
