The healthy and wholesome Wan Tan Mee gets its name from the wan tan, the pork or shrimp dumplings, that comes with this noodle dish. it can be served either dry or with a clear soup. What sets the Wan Tan Mee apart from other noodle dishes is its springy egg noodles served with either a clear pork-broth soup or a dressing of dark soy sauce, light soy sauce and lard. These noodles, which come either thick or thin, are very springy and when chewed, makes for a very interesting texture quite like a squid! Both the wet and dry versions come with a garnish of barbequed pork slices, mustard greens and spring onions. A bowl of soup with the plump dumpling accompanies the dry version whereas the dumpling will be place in the bowl itself for the wet version. Wan Tan Mee is best eaten with a condiment of pickled green chillies dressed with light soy sauce.
