►Paleo Banana Bread
3 Bananas (around 300g)
4 Large Eggs ( I used 3 Jumbo Eggs)
1 TBS Vanilla Extract
50ml Almond Milk (I just splashed some in, I don't know the exact measurement)
20g Coconut Oil
Maple Syrup (optional)
55g Coconut Flour
50g Almond Flour
1 tsp Baking Soda
Blend the wet ingredients and then mix the dry ingredients. If the mixture is too dry, then add a little almond milk!
Bake for 30-40 mins at 180 degree celsius/355 degrees Fahrenheit.
►Oats and Nuts Bar
3/4 cup of Cashews
3/4 cup of Almonds
1 cup of Rolled Oats
1 TBS Chia seeds
1 1/2 Cup of Dates
Reserve some water from the soaked dates
A bit of almond milk
Soaked the dates for 1 hour with hot water. Drain and reserve some of the water for later.
Process the nuts. If you prefer it coarse then pulse it just a few times or roughly chopped it.
Add rolled oats and chia seeds to the nuts.
Now blend the dates with the reserved water and a little almond milk. Blend until somewhat smooth then add to the dry mix.
Mix the ingredients all together and transfer it to a tray! Leave it in the fridge for a couple of hours to set.
►Acai Banana Smoothie
Toooo easy. Just a pack of frozen acai pack and 2 frozen bananas. I had around 200g bananas here. You can also use the freeze dried acai but they are a bit grainy for my liking.
