First Step
Season the chicken with salt pepper and lemon juice and zest.
Cover for a min of 20 mins, overnight is great.
1KG Chicken cut into parts.
1 lemon juice and zest
Salt and Pepper.
Seasoned Flour
2 cups plan wheat flour
Then 1 TSP OF
Garlic Powder - Chilli - Cumin - Coriander - Salt - Pepper - Paprika - Anise
Mix all together and set aside.
The egg wash
3 eggs and 1 cup of full fat milk.
Beat and mix together.
Dipping
Take one bit of the chicken and flour, then into the egg wash and back into the flour.
Repeat this on all the chicken.
Frying and Oil.
Canola oil is great, Olive oil is not. Sunflower or corn also work well.
In a heavy based pot or pan add 4 - 5cm of oil.
We need this oil to reach 350/176 and not more than 275/190.
once the chicken goes in the temp will drop, you must not let it go below 300/150.
Add the chicken do not over crowd the pan and cook for 7 - 12 mins depending on the size of the chicken parts.
Once done place the chicken on paper towels and it is done. Enjoy.
