Why has it taken me this long to be making my pasta and lasagne sheets from scratch!?

HOW TO MAKE:
1. Place 2 cups of bread flour in a clean work surface and create a well in the middle

2. Crack 2 large eggs into the well along with a sprinkle of salt

3. Whisk the eggs within the well then slowly incorporate the flour, folding in to make a dough

4. Use clean hands to kneed the dough for 8-10 minutes until smooth (be patient here, I know your dough feels dry but it will come together I promise)

5. Wrap your ball of dough in cling wrap and set aside for 30 minutes

6. Divide your dough into 4 equal portions and using your pasta machine, role it out to lasagne sheet thickness (this should be specified in your pasta maker manual. Each pasta maker is slightly different levels)

7. Sprinkle flour on a clean work surface, place lasagne sheets on top and sprinkle a little extra flour on top of each sheet

8. OPTIONAL: thoroughly salt boiling water and blanch each lasagne sheet for a few minutes before assembling your lasagne
