This cowboy cornbread chicken is not chicken served with cornbread, but chicken served in cornbread, and not just any cornbread. This features a cornbread spiced-up Southwest-style, just like the cowboys made it…allegedly. And, since everybody knows cowboys don't like to wash dishes, it's a one-pot meal. I served it with a chipotle spiked hot honey butter. Enjoy!
