Just a few of the Italian-style things that I like to snack on or eat. I can get quite bloated after bread and pasta, so here I have some bloat-free alternatives!
Recipes Shown - please bear in mind that I am so haphazard with my measurements and volumes when it comes to cooking!
The Pizza Bases are now available in Asda, Morrisons, The Co-op and Booths.
The Panini Rolls are now available in Tesco, Morrisons, Waitrose, Asda, Sainsbury's and Booths
Broad Bean and Feta Bruschetta:
Schar Gluten-Free Panini, sliced across into small, thin pieces and then briefly grilled until crisp
Approx 250g frozen broad beans, boiled and then shelled
Approx 100g feta cheese, mashed with 2 tbsp natural Greek yoghurt
1 clove of garlic, rubbed across the grilled panini
“Caponata” Aubergine Stew
One aubergine, cubed and fried in olive oil until soft
One red onion, diced, and two or three cloves of garlic, crushed, added to pan
Green olives (or black!) and a tbsp of capers, added to pan
Half a carton of passata (sieved tomatoes) or half a can of chopped tomatoes, added to pan, seasoned
(My bulk-it-out option: a tin or pack of pre-cooked puy lentils!)
Served with buffalo mozzarella, or soft goat’s cheese, or even feta, or as a side dish with grilled fish or meat
Gluten-free Pizza
Pizza sauce made by gently frying crushed garlic in passata (sieved tomatoes)
On the goat’s cheese version: sauce, sun-dried tomatoes, soft goat’s cheese and basil leaves
On the “fresh salad” version: sauce, buffalo mozzarella, rocket and cherry tomatoes. I take the pizza out a few minutes before the cooking time is up and add the mozzrella and tomatoes - the rocket is thrown on very last thing and I sometimes “dress” it like a salad with balsamic vinegar, oil, salt and pepper!
