From Poland’s deep-fried dough delight known as pączki to creamy egg custard tarts considered a national treasure in Portugal, these treats are lovingly made from recipes that go way back. One of the bakers we met, a dessert anthropologist, specializes in resurrecting desserts made famous by Los Angeles restaurants.
